Gruppo Caviro: IT at the service of information

The more the company implements data-driven internal processes, the more important the two keywords of this approach become: Knowledge and Accuracy. When implemented in the company, these concepts provide the best possible representation of reality through data.
Together with Var Group, Caviro has enabled its data to speak for itself, thus making the information it needs as the largest Italian winery available for its daily operations.
Since its earliest days,Caviro has based its business model on the synergy of processing, the reduction of its environmental impact and the valorisation of its resources with enabling technologies.
Caviro was established in 1966, with the mission to get the best value from the grapes of its wine-growing members, who are guided to produce the varieties of most interest for their various markets, with a focus on quality and reduced environmental impact.
Caviro operates in the wine, agri-food chain by-products and energy sector with their recovery, valorisation and processing, reducing processing waste and consequently reducing the environmental impact of their activities to almost zero.
From requirement to project: data as raw material
The Caviro project has many aspects and special features. The modules of the i-wine suite, developed by Apra, Var Group's wine industry unit, have been tailored to the group’s specific requirements and integrated into Caviro's systems, in order to better manage their data and make them speak.
The company's data management starts from the moment the tanks cross the threshold of Caviro's production sites, right up to the bottling of the finished product.
In fact, the winery operator, thanks to fast authentication with badges and its data logging application, is able to report autonomously in real-time on all winery operations. Previously, data were registered manually by the operator the following day. This led to a delay in the processing of production data and the consequent possibility of human error during note-taking and data recording operations.
Today, however, Caviro can count on real time data from its the winery operators, which are integrated with the data produced by the machines, tanks and filters connected in an Industry 4.0 paradigm with the company's management system.
Process control to optimise production
An important module integrated into Caviro is the i-wine lab, which enables the user to configure raw material controls during processing and manage the instrumentation and activities related to the entire process.
In fact, the i-wine lab module can manage all winery activities with its process scheduling and execution. In this way, the system generates the information necessary for tracking the wine and the products used in processing, and is thus a valuable tool for achieving product certification.
This product control allows Caviro to systematically and optimally deliver the SIAN - Sistema Informativo Agricolo Nazionale (National Agricultural Information System) - telematic registers, which are compulsory for the quality control of wine products.
The data collected at each stage of production is also used to analyse the margins and processing costs of each product.
Gerardo Cesari, a Veronese winery belonging to the Caviro ecosystem, has also adopted the i-wine suite to manage its data and processes, but starting from an earlier point than Caviro, namely on-site processing and drying of the harvested grapes to create the world renowned Amarone wine. This model of quality and enabling technology has been integrated into the company, offering a single system for product tracking and traceability.
